Free-radicals watch out! I’ve got Wheatberry Salad (and coupons for free Sunsweet products)

Sunsweet has a  brand new product on the market called Antioxidant Blend which packages dried cherries, plums, wild blueberries and cranberries into one five-ounce resealable pouch. And we’ve all heard about the super-hero powers of antioxidants when it comes to fighting free-radicals, right?

Well, even if you haven’t heard of the free-radical-fighting, oxidation-slowing powers of antioxidants, you’ve probably heard they’re good for you. And if you know me, you know I’m always forcing foods that are “good for you” on my unsuspecting family members. And Sunsweet recently helped me out by sending me a sample of the Antioxidant Blend, which is why I did these two things:

1) Told my toddler that it was candy, and therefore got her to eat about a fistfull of this yummy fruit blend, and

2) Revised my favorite “Cranberry Wheatberry Weight Watchers Salad Recipe” to a “Antioxidant Blend Wheatberry Salad.”  The result was delicious and pretty. Check it out:

If you happen to know my teen and if you’re wondering if I managed to get her to eat it, the answer is NO! But it was still delicious. And each serving of the Antioxidant Blend has only 130 calories.

Here’s my “revised” version of the Wheatberry Salad Recipe:

Ingredients:

  • 1 cup hard wheatberries
  • 1 cup finely diced green onion
  • 3/4 bag Sunsweet Antioxidant Blend (I would’ve used the whole bag if I hadn’t given part of it to my toddler)
  • 6 tablespoons fat-free or low-fat raspberry vinaigrette salad dressing
  • 2 tablespoon lime juice
  • 1/2 teaspoon freshly ground black pepper

Directions
Place the wheatberries in 3 cups of boiling water and cook, uncovered, over low heat for approximately 45 minutes, or until they reach your desired tenderness. Drain. Mix wheatberries and remaining ingredients together and chill for at least 30 minutes.
