Challenge Dairy, a maker of pure butter and other dairy products, is sponsoring a Taste of the West sweepstakes, giving you a chance to win a 7-day, 6-night trip for four to Mountain Sky Guest Ranch in Montana’s Paradise Valley.  These products are available in the Western United States (and I’m in the MidWest), but Challenge Dairy sent me a few of their products along with an assortment of spices from Spice Islands and encouraged me to use them in a recipe for the purpose of promoting the sweepstakes (which is open to everyone). I chose to make an entree, and it turned out fabulous, if I do say so myself. It’s similar to Cincinnati-style chili, so if you like that dish, you’ll like this one, too. Here’s the recipe:

Healthy-style Chili Cincinnati Style

Ingredients:

  • 1 lb ground turkey
  • 1 can crushed tomatoes
  • 2 onions, chopped
  • 3 TBS chili powder
  • 1 TSP nutmeg
  • 1 TSP cinnamon
  • 1 TSP vanilla
  • 1 TBS Challenge Dairy Butter
  • 3 TBS chili powder
  • 2 TBS red-wind vinegar
  • 1 TBS paprika
  • 1 LB whole-wheat spaghetti, cooked
  • 1 cup low-fat shredded cheddar cheese (optional)

Cook ground turkey and set aside. Saute onion in butter for five minutes and then add to beef, along with remaining ingredients (except spaghetti). Mix well and simmer on low  for 30 minutes or put in slow cooker on low for 1-2 hours.

Serve meat sauce over spaghetti noodles sprinkled with low-fat shredded cheddar cheese (optional).

Now for the really fun part (as if my chili recipe isn’t fun enough).
